Crustless Quiche

I'm really into having quiches for lunch at work at the moment so here's my recipe if anyone is interested:

Layer a quich dish (preferably metal with a solid base) with mushrooms, baby spinach, sliced shallots. You can use any other vege you like such as steamed broccoli, zucchini, corn, grated carrot, red or brown onion etc.

Mix together 2 eggs, 1/2 cup wholemeal SR flour, 3/4 cup milk, 1 tbspn grated parmesan, salt & pepper. Pour over veges in quiche dish.

Slice a tomato and lay slices on top, sprinkle with another tbspn of parmesan cheese and some paprika.

Bake in a preheated oven 220 degrees (celcius) for 20 minutes or until set. Enjoy! :D

your quiche

This actually sounds very good, well except the mushrooms. I have not had a lot of luck acquiring a taste for them. Too fungal I guess. :wink: Anyways, sounds good - I plan on trying it as soon as I get to the store.
